Using iTunes, syncing of content is generally one way, from computer to iPod. Because it is 'syncing,' (by definition) everything on the iPod should already be in your iTunes library, so there is (normally) no need to sync content from iPod to computer.

You cannot use iTunes to transfer song files from iPod to computer (except for songs purchased from the iTunes Store). However, there are third-party methods and utilities that can transfer from iPod to computer. If you do a Google search on something like 'ipod transfer,' you should get some links.
Once the songs files are on the Mac, you can add them to the iTunes library. Once your iTunes library is consolidated with ALL of your songs, you can go on to the second question.
If you use automatic syncing, you need to set up the iPod's Music tab in iTunes.
Select the iPod in iTunes. There is a row of 'tabs' (starting with Summary). Select Music there. This is the Music tab, where you tell iTunes how to sync the iPod with songs. Sync Music is checkmarked for automatic syncing.
If your entire iTunes music library can fit on the nano, you can choose to sync Entire music library. Otherwise, you can choose to sync Selected playlists, artists, albums, and genres. Create your selection of songs below. For example, if you want to keep it simple, create a new playlist in iTunes. Put ALL songs you want on the iPod on that playlist, including those newly purchased songs. Back on the Music tab, find and checkmark that new playlist under Playlists.
When you click Apply, your selection of songs on the Music tab syncs to the iPod, replacing its current content. Going forward, any library changes that are related to the Music tab settings sync automatically when you connect the iPod, or when you click Sync. So, if there is a playlist with your 'iPod songs,' you can just update that playlist (add and remove songs) whenever you want; iTunes automatically updates the iPod with the same changes at the next opportunity.

You probably won’t be too surprised to discover that, on the off chance your iPod gets confused or refuses to turn on, you can fix it by resetting it and restarting the system — just like computers and other iPods. Resetting does not restore the iPod touch to its original factory condition, nor does it erase anything — your content and settings remain intact.
To reset the iPod touch, touch and hold the sleep/wake button and the Home button at the same time for at least 15 seconds, ignoring the red Slide to Power Off slider, until the Apple logo appears.
After you reset the iPod touch, everything should be back to normal, including your music and data files.
Resetting your iPod touch settings
You can reset all or part of your iPod touch settings while leaving your content and personal information intact. To see your resetting options, choose Settings→General→Reset from the Home screen (Reset is at the very bottom of the General settings screen). The Reset screen appears with the following options:

- Reset All Settings: To return your iPod touch to its original condition with no preferences or settings while still keeping your content or your personal information (including contacts, calendars, and e-mail accounts) intact, tap Reset All Settings.
- Erase All Content and Settings: To erase everything, first connect the iPod touch to your computer or a power adapter, and then tap Erase All Content and Settings. This operation can take a while, and you can’t use the iPod touch until it finishes.
